Mushroom & Marmite Pasta

Please, please, please give this a try whether you are a lover or a hater! There are also some variations too…. swap the mushrooms for chopped ham or bacon…. swap the parmesan for grated cheddar…. swap the marmite for an OXO cube or Bovril!!! I dare you all to try it!!! It only takes as long as your pasta does to cook!

Serves 2

Ingredients:

150g pasta, uncooked (spaghetti or linguine are my favourite choices)

1cup mushrooms, sliced

2 garlic cloves, crushed

Splash of oil

1tsp course ground pepper (I add more but I love pepper)

50g butter

1 tsp marmite (you can always add more if you like)

1tbsp dried parsley

40g grated parmesan (you would think I was a cheese fiend if I told you more…. your choice!)

Variations:

Instead of mushrooms: 1cup of chopped bacon/diced ham

Instead of parmesan: 50g grated cheddar

Instead of marmite: 1tsp Bovril or 1 OXO cube (crumbled)


Method:

Bring a medium saucepan of water to the boil and add a tablespoon of salt (I always salt the water as it helps season the pasta). Cook as per packet instructions. I prefer mine ‘al-dente’, so not over cooked, this is generally two minutes shorter than the full cook time or it may even say on the packet instructions.

Meanwhile, heat the oil, gently fry the mushrooms (or bacon) and garlic until nicely coloured. Add the pepper, parsley and butter. Lower heat. Stir in the cooked harm to warm through, then add the marmite/bovril/crumbled OXO cube and parmesan/cheddar. Add 6tbsp of the pasta water. Stir.

Drain pasta when cooked to your liking, and add the pasta to the sauce. Mix until well combined and serve!
