
Unfortunately you will need a waffle iron/machine for these, but you could make thick american pancakes too. I have written down the basic recipe but feel free to add berries, chocolate, crumbed biscuits or cookies to the mix! Biscoff or Oreos are great or chopped up Mars Bars for a treat! Dont forget, waffles dont have to just be sweet…. potato and cheese waffles are delicious too! No scales required! You can pick up these waffle irons fairly cheaply on Amazon, Ebay and sometimes in Aldi/Lidl!
Makes 5-6 8″ waffles
Ingredients:
2 cups self raising flour
1 tsp baking powder
1 tsp bicarb sod
1-2 tbsp sugar or sweetner (optional)
1/4 teaspoon salt
1 3/4 cups milk
1/2 cup butter
1tsp vanilla
Pinch of salt
1tsp ground cinnamon (optional)
2 eggs
Frylite spray
Flavours for in waffles:
Blueberries, berries or banana roughly chopped, chocolate (chopped), biscuits (lightly crushed)
Topping suggestions:
maple syrup, cinnamon and sugar, nutella, icecream, squirty cream, yoghurt, fresh fruit, chocolate or flavoured sauces, lemon curd or honey
Method:
In a large mixing bowl, mix together all the waffle ingredients until a smooth batter forms.
Leave to rest for 30minutes.
Preheat oven to 150’c.
Mix through chocolate chips/fruit/crushed biscuits or chopped sweets.
Heat waffle iron to medium-high (mine is closer to “dark” on my dial. When waffle iron is ready, spray lightly with frylite. Using a soup ladel pour mix into middle, roughly smoothing out, close iron. Cook for 5-7minutes.
Repeat with the rest of the batter, keeping the waffles warm in the oven until ready to serve and remember to spray with frylite in between waffles. Then topping with your favourite toppings! These are also great frozen, and reheated in the toaster lightly for a quick breakfast or dessert.
