
This is an absolute firm favourite in our house! If you like kebabs but want to have a tasty one but not all the calories then these are the real deal! I did two versions here because I like the difference in textures and they both have the same marinade, so why not! Slimming World Friendly apart from the pitta which you can syn and if you add chilli sauce… I make my own according to SW rules. By all means switch the chicken out for lamb… its just as good!
Serves 2-3 (depending on how big you want your kebabs- I pack mine with loads of salad)
Ingredients:
Marinade:
4-6 garlic cloves
1/2 white onion
1tbsp ground cumin
1tbsp garlic powder
1tbsp onion powder
1tbsp smoked sweet paprika
1tbsp ground turmeric
1htbsp dried oregano
1tsp salt
1/2tsp mixed spice
1tsp sweetener
1tsp bicarb soda
1tsp ground pepper
1 lemon, juice
Optional:
1htbsp harissa
1tbsp chilli flakes
500g chicken thighs, skinless & boneless
1/2 red onion (left whole)
1 red pepper, deseeded, sliced (1cm sticks)
1 white onion, sliced (1cm thick)
Pitta
Mixed salad leaves
1/2 red onion thinly sliced
Chilli sauce (optional)
Tzatziki:
500g 0% fat Authentic Greek Yoghurt (Extra thick)
1 large garlic glove, grated/crushed
1tsp ground cumin
1/2tsp salt
1tbsp dried oregano
1 lemon, juice
1tbsp olive oil (optional)
Method:
In a food processor, blitz all the ingredients until a smooth paste.
For the doner meat, take half the chicken and roughly dice, and blitz with half marinade until a smooth paste. Leave to marinade for a while, at least 1-2hrs.
Preheat grill on high.
Then place between two layers of cling film and press out to around 3-4mm thick, using a rolling pin. Remove top layer of cling film and place a piece of baking paper over. Flip over so baking paper is on the bottom and remove other piece of cling film. Place onto a baking sheet and cook as close to the grill as possible. Cook for about 7minutes, keeping an eye on it. Until golden brown on top. Because it is rolled out so thin, it will not take long to cook. Then remove from oven and thinly slice into strips.
For the shish kebab, marinade the other half of the chicken thighs and marinade for a few hours, or overnight.
Preheat oven to 180’c.
On half of red onion, place 2-3 skewers in and skewer meat onto them, sometimes Inlayer thin slices of onion between each layer over the meat. Place upright onto a baking tray. Surround with sliced pepper and sliced white onion. Cook in oven for 30-40mins until meat is cooked through. Turn vegetables over half way. Remove when cooked and slice into strips.
For the tzatziki, mix all the ingredients together and serve.
To assemble, grill the pittas until toasted. Cut open, lengthways to make a pocket. Layer with salad of your choice, the cooked peppers and onions, the mixed doner and shish meat and sauce if using.
